Preheat oven to 350°F (180°C). Grease a loaf pan or a round cake pan.

Beat eggs and sugar till thick. Gradually add in oil.

Add in flour, baking powder, salt, lemon juice, zest, vanilla extract. Beat until smooth.

Pour batter into pan, bake for about 40 mins.

Allow the cake to cool in the pan for 10 mins before turning it out onto a cooling rack.
