Potato Salad a la Mama Inge (with increased eggs and pickles a la Nils and Yourui)
8 to 10 large potatoes (cubed)
4 to 10 hard boiled eggs (cut into small pieces)
3 sticks celery (sliced thinly)
⅓ cup green onion (diced)
4 or whole jar medium sized pickles (diced)
1 roasted or fresh red bell pepper (diced)
handful chopped parsley
Dressing
¾ cup yoghurt
½ cup mayonnaise
1 shot pickle juice
salt+pepper to taste

Boil the potatoes and eggs and let them cool beforehand.

Get a big bowl, mix everything together!
If too thick, add a bit of milk
If too runny, add a bit of egg yolk
