Simple Veggie Filling

Simple and yummy. Mom likes to make quesadillas with this veggie filling.

 6 shiitake/button mushroom (optional)
 1 yellow onion
 2 medium potatoes
 ½ stick carrot
 1 stick celery (optional)
 1 red bell pepper
 1 green bell pepper
 curry powder (until fragrant)
 oyster sauce (optional)

Dice all the veges into small cubes.

Stir fry onions with some oil until fragrant.

Add in ingredients in sequence after onions:
Mushroom > Potatoes > Carrots > (Celery)
Keep stirring

Season with salt and pepper. Add some curry powder for more flavor. Add oyster sauce (optional)

Add a bit of water to make the veggies soft. The dish is ready to serve when the potatoes are soft.

Pair bread/pita/wrap with this filling.
