Teochew Glutinous Rice Peach Shaped Dumpling
Can add "cai bo" (pickled radish thing) and other vegetarian options for the filling.

Skin Dough
 500 g rice flour
 100 g tapioca flour
 750 ml boiling water
 1 tsp salt
 5 tbsp fried shallot oil
Filling
 500 g glutinous rice (soaked for 4 hours)
 3 tbsp fried shallot oil
 100 g dried prawns, soaked
 60 g dried shiitake mushrooms, soaked and diced
 90 g peanuts, add 1 tsp salt, boiled until soft, drained
 90 g toasted peanuts
 1 tsp salt
 ½ tsp pepper
 1 tbsp fish sauce
 1 tbsp light soy sauce
 1 tsp chicken stock powder
 1 tsp dried sole fish (optional)
 3 tbsp fried shallots
