Basically, all seasoning can be substituted. The most important ingredients are: vital wheat gluten, water, and beans.

Dry Ingredients
 1 cup vital wheat gluten
 1 tsp paprika
 1 tsp oregano
 1 tsp italian seasoning
 1 tsp parsley
 1 tsp mushroom seasoning
 ¼ tsp rosemary
 ¼ tsp chili flakes
 2 tsp ground flax seed
 1 tbsp nutritional yeast flakes
 some salt to taste (optional)
Wet Ingredients
 1 cup cooked beans, mashed (red kidney beans etc)
 ½ yellow onion, minced
 2 tsp garlic, minced
 1 tsp worcestershire sauce
 1 tsp maple syrup
 1 tsp balsamic vinegar
 1 tbsp ketchup
 1 tbsp soy sauce
 1 tbsp marmite mixed in 1/2 cup warm water OR 1/2 cup broth

Mix the dry ingredients in a medium large bowl.

In a separate bowl, mix the wet ingredients well.

Add the wet ingredients to the dry ingredients and mix til incorporated (no dry bits). Then knead dough/patty with hands for a few minutes. Dough should feel pretty soft but shapeable. After kneading, let it rest for 5 mins.
*(knead more for tougher patty, knead less for softer patty.)

Form patties and then wrap in aluminum foil and steam for about 30 minutes.

Heat oil in frying pan and fry on both sides on medium heat until browned (a few mins).
